LUTEFISK is white fish treated with lye (sodium hydroxide) and cold water mixture to create a jelly like consistency to the fish. The Lutefisk is part of Sweden’s Christmas tradition, it’s normally served with boiled potato and white sauce.

Smörgåskaviar Is fish roe spread, it mostly uses common sturgeon or salmon caviar or cod (which is the cheapest).

SURSTRÖMMING is fermented Baltic Sea herring that has been a staple of traditional northern Swedish cuisine since at least the 16th century.

Nyponsoppa is rouse hip soup, is made from the hip of Rosa canina (wild rose) picked when ripe and red and after the first frost in the fall, then dried. The hips are boiled until they are soft and then blended with a mixer, the mixture is then run through a sieve and thickened with potato flour. This soup is normally paired with vanilla ice cream, milk or cream.
